Sables with Jam by the Kids
This is one of my wife's favorite recipe with her cafe after lunch, it's extremely easy and so gourmand, plus it is really fun for the kids to do :-)
I think in the US it's called a thumbprint cookies. At my house, we are doing a slightly different version of it... Instead of using jam, we are using some Dulce, it's like a jam but it's more intense than the jam so the concentration of the flavor is more intense than a jam plus it has less sugar...
For this recipe, you need a robot coupe, i'll try it by hand and we'll let you know.
- 225 gr of Flour (1 3/4 cup)
- 100 gr of Sugar (1/2 cup)
- 1 teaspoon Vanilla extract
- 1/4 teaspoon Baking powder
- 1 teaspoon salt
- 170 gr of Salted butter (3/4 cup)
- 1 jar of Dulce of your choice (we used Raspberry and Passion Fruit... Yummy!)
Combine all the dry ingredients together and pulse for a bit to make sure everything is well mixed.
At this point, add your vanilla extract and your butter in small cubes. Pulse again in the mixer until the butter is well broken and until it start making a dough on the side of your bowl.
Once you have reach that point, combine the dough together on your counter top to make a nice round ball and refrigerate with plastic wrap for an hour.
After the hour mark, cut the dough in equal pieces, roll them in your hand and put them inside your cupcake mold, mini are ideal. Big ones work as well but then it's not much of a snack anymore :-)
Using your thumb create a whole in the middle making sure not to go through the sable and onto the mold otherwise it would stick.
Fill it with your favorite dulce, in our case, we used the Raspberry one...
Bake at 325 for 20-25 minutes and treat yourself. You can keep them in a sealed box for about 4 to 5 days if they last that long :-)
