Orange Cake.... Upside Down!

Hello again, 

Today's recipe is all about citrus... even though you can do this awesome recipe with literally any fruits. So far we've tried lemon, apple, pears, pineapple... The possibilities are endless! :-)

We got some oranges from good friends of ours and so after some jam, what better then a cake to put them to good use :-) 

So here it is, for the cake batter :

  • Eggs - 4
  • Sugar - 180g or 3/4 cup
  • Flour - 150g or 1 1/4 cup
  • Butter melted - 150g or 1/2 cup
  • Almond meal - 120g or 11/4 cup

For the oranges : 

  • Sugar - 200g or 1 cup
  • Water - 125ml or 1/2 cup
  • Vanilla bean - 1
  • Oranges - 2

 

Preheat the oven at 160ºC or 320ºF

Onto our recipe now: 

Find the right cake pan for that as it need to go on top of the stove but also in the over... can be done out of an oven proof sauce pan also :-) 

Melt your water your sugar in your pan with the vanilla bean

Wash your oranges really well (organic oranges are best as we use the skin). Thinly slice your oranges whole if possible with either a knife or a mandolin if you have one. Add the oranges and simmer for 10-15 min depending on how thick your cuts are :-) Once they are soft, set aside and let it cool down. 

Onto our batter now: 

Super easy, Mix the eggs and the sugar together for 8 to 10 minutes until it becomes thick, pale and has tripled. 

Once you have that, add your sifted flour and then your almond meal and finish with your butter melted. 

 



Poor the batter into your pan on top of the oranges and the liquid and bake for 40-45 minutes. 

Let it cool down a bit and then put a plate on top and flip it up side down. 

Et voila !!!
